Fresh sausages refer to uncooked products that are formed into sausages and sold instore in the fresh meat section. They typically have a shelf life of between 2 days and 7 days. These products include Polish sausages, Boudin, Medister, Boerewors, fresh Bockwurst, Bratwurst, fresh Pork Sausage, Italian-style fresh Pork Sausage, Salsiccia, Weisswurst, fresh Thuringer.

Typical preservatives used are phosphates, Sodium nitrite, Sodium Nitrate or potassium nitrite, or even increased salt levels. But shelf life remains very short due to the uncooked nature of the product

New preservation technology however has brought new exiting ingredients that are more micro-biome friendly than traditional shelf life ingredients.
